Pistachio cheesecake

Indulge in the silky texture of this dense and creamy pistachio cheesecake. The buttery dark cookie crust creates the perfect sweet-and-salty crunch. The rich cream cheese filling is infused with a blend of raw pistachios, complemented by a tangy pistachio-lemon ganache on top. Decorated with crushed green pistachios, fresh raspberries, and delicate dried flowers, this cake evokes a forgotten nostalgia with its deep earthy flavors and sensual look.

Carrot Mango Mélange

The classic carrot cake texture complemented by hints of mango. Four layers of dense sponge, infused with pecans, carrots, and cinnamon. Each layer is topped with mango syrup and vanilla cream cheese frosting. The hidden gem — a layer of carrot-mango confit — provides a delightful sweet and fruity aftertaste. The crown is decorated with physalis, crushed walnuts, and pecans roasted in honey.

The Wagtail

The cake "Cielavina" is associated with traditional Latvian flavors, and every Latvian has their way of enjoying it — soft and delicate after sitting out for hours, or cold and firm straight from the fridge.  This cake features crunchy hazelnut meringue layers, coated with chocolate ganache and cacao buttercream infused with rum. The flavor becomes richer with each passing day, so be sure to leave the spoon in the fridge.

Dark Cherry Forest

The cake features layers of dark chocolate sponge soaked in cherry liqueur and topped with whipped vanilla cream cheese. The rich cherry filling, combined with cherry crémeux, creates a sour contrast to the overall flavors. The finishing touch -poured dark chocolate ganache, complemented by fresh blackberries, pomegranate seeds, and flowers.

Honey Bee Hive

Eastern European honey cake, also known as Medovik, features eight layers of soft gingerbread and sour cream frosting, adorned with dark chocolate nut bees. The aftertaste of slightly burnt honey, cinnamon, and a hint of cloves. Its rich flavors pair beautifully with a spoonful of sour jam or a handful of fresh forest berries on the side.
